Ingredients



For the scones:225g/8oz plain flour1 tsp baking powder1 tsp ground cinnamon55g/2oz caster sugar2 eggsmilkclotted creamFor the jam:30g/1oz butter8 Cape gooseberries, leaves removed and cut in half55g/2oz caster sugar1 tbsp elderflower cordial



Method



1. Place the dry ingredients for the scones in a bowl. 2. Stir in the beaten eggs and enough milk to form a batter the consistency of thick cream.3. Place spoonfuls of batter in a hot, greased frying pan.4. Turn the scones when the batter starts to bubble.5. Prepare the jam by placing all the ingredients in a small pan. Boil for 5 minutes.6. When the scones are ready place them on a plate.7. Remove the jam from heat and transfer to a small bowl.8. Place the clotted cream in a bowl and serve alongside the scones and jam.
