Ingredients



For the marlin:145g/5oz fresh marlin steak2 tsp sesame seedsfreshly ground black pepper1 tsp vegetable oilFor the pak choi:2 tsp vegetable oil½ red bird' s-eye chilli, finely chopped½ garlic clove, finely chopped½ pak choi, choppedFor the dressing:3 tsp olive oil1 tsp balsamic vinegarsalt and freshly ground black pepper



Method



1. Preheat the oven to 220C/425F/Gas 7. 2. Place a small ovenproof frying pan over a high heat.3. Season the marlin with freshly ground black pepper then coat the top of the steak with sesame seeds, pressing them down to stick.4. Drizzle the marlin with the oil, pan fry for 2 minutes, then transfer to the oven for a further 6 minutes or until just cooked through.5. In a small bowl, mix the dressing ingredients and set aside.6. Heat the oil for the pak choi in a small sauté pan.7. Sauté the chilli for 30 seconds then stir in the garlic. Add the pak choi and continue to cook until just wilted.8. Serve the sesame crusted marlin on a bed of pak choi and drizzled with the dressing.
