Ingredients



For the skate:½ skate wing, boned55g/2oz plain flour30g/1oz buttersplash of olive oilFor the beurre noisette:170g/6oz butter4 tbsp lemon juice



Method



1. Heat the butter and oil in a medium frying pan.2. Preheat a small saucepan.3. Dust the skate in flour.4. Place the skate in the frying pan. Fry for 3-4 minutes, either side.5. Make the beurre noisette: place the butter in the small saucepan and heat gently until the butter melts.6. When the butter turns nut brown, add the lemon juice. Boil the sauce until it has reduced to about 1-2 tbsp.7. Serve the skate with the beurre noisette over it.
