Ingredients
For the koftas:255g/9oz minced lamb1 tsp cumin seeds, dry fried1 tsp ground cayenne½ tsp ground mixed spicefreshly ground black pepperplain flourvegetable oilFor the sauce:6 plum tomatoes, de-seeded and pureed1 tbsp tomato purée2 tsp vegetable oil½ onion, peeled and finely chopped1 tsp cumin seeds4 cardamom pods, split4 curry leaves
Method
1. Preheat a griddle pan.2. In a medium bowl, mix together the lamb and spices.3. Divide the mixture into 8.4. Roll the 8 portions into nuggets.5. Roll the nuggets in a little flour, then vegetable oil.6. Griddle on all sides until cooked through and charred.7. Meanwhile, in a medium saucepan, heat the oil for the sauce.8. Fry the cumin seeds, cardamom seeds and curry leaves for 30 seconds.9. Add the onion and sauté for 1 minute, to soften.10. Stir in the tomatoes and tomato purée. Cook for 3-4 minutes.11. Stir the nuggets into the sauce.12. Serve.
