Ingredients



125g/4oz unsalted butter150g/5oz caster sugar2 eggs1 egg, yolk only220g/7oz self-raising flour4 tbsp lemon curd2 lemon, rind only and juice of 11 lime, rind of 1 tbsp sugarwater



Method



1. Whisk the butter and sugar until white and fluffy. Add the eggs one at a time. Add the flour and mix well. Add the lemon juice and rind mix. 2. Put a layer of lemon curd at the bottom of individual pudding bowls.3. Put the mixture on top of the curd in the pudding bowls and cover with foil. Steam for 30-40 minutes.4. Boil the lemon and the lime rind with the sugar and just enough water to cover the rind. Simmer for 4-5 minutes, then remove and leave to dry, preferably for 24 hours.5. Turn the puddings out on a plate and top with lemon and the lime rind which has been reduced in sugar and water. Serve.
