Ingredients
570ml/1 pint milk200g/7oz basmati rice1 vanilla pod, splita few cardamom pods, ground1 bay leaf55g/2oz unsalted butter55g/2oz caster sugar ½ mango, peeled and diced1 orange, peeled and sliced55ml/2oz double cream
Method
1. Gently bring the milk to the boil in a medium non-stick pan.2. Add the rice, vanilla pod, cardamom and bay leaf, reduce the heat and simmer gently for 12-15 minutes, stirring occasionally. 3. Meanwhile, heat the butter and sugar in a pan until melted. Add the mango and orange slices and heat gently until caramelised.4. Remove the rice from the heat and stir in the cream.5. Spoon the rice mixture into tall glass serving dishes and top with the caramelised orange and mango.6. Serve.
