Straw and Hay

Yield: Makes 4 servings

Delighting in word pictures, the Italians call a combination of green and white noodles "straw and hay." They coat the noodles with a delicate sauce such as this combination of cheese and peas.





Ingredients:



1cup fat-free (skim) milk

1/2cup fat-free cottage cheese

2teaspoons cornstarch

1/4teaspoon ground mace

1/8teaspoon black pepper

4ounces uncooked plain fettuccine

4ounces uncooked spinach fettuccine

Nonstick cooking spray

4ounces reduced-fat deli-style ham, diagonally sliced

2tablespoons snipped chives

1cup frozen peas, thawed and drained

1/4cup grated Parmesan cheese

1/8teaspoon paprika









Preparation:





1.Combine milk, cottage cheese, cornstarch, mace and pepper in blender or food processor; process until smooth. Set aside.2.Cook pasta according to package directions, omitting salt. Drain; set aside. Meanwhile, spray large nonstick skillet with cooking spray; heat over medium heat until hot. Add ham and chives; cook and stir until ham is lightly browned. Add milk mixture and peas; cook and stir until thickened.3.Remove from heat. Add pasta and Parmesan cheese; toss to coat evenly. Sprinkle with paprika; serve immediately.
