Ingredients



110g/4oz sweetcorn1 egg white, whisked until soft peaks110g/4oz self-raising flour1 tbsp baking powder 1 egg150ml/¼ pint milkpinch of chilli flakes55g/2oz unsalted butterFor the yoghurt dip200ml/7fl oz Greek yoghurthandful chives, finely chopped2 tbsp white wine



Method



1. Place the sweetcorn in a food processor and blitz to form a purée.2. Transfer the purée to a bowl and fold in the egg white.3. Mix in the flour, baking powder, egg, milk and chilli flakes to form a batter.4. Gently melt the butter in a frying pan over a medium heat.5. Spoon the mixture into the pan to make 4-6 fritters.6. Fry the fritters for 2-3 minutes on either side, until golden and crisp.7. To make the yoghurt dip, place the yoghurt, chives and wine into a bowl and mix together until combined.8. Transfer the dip to a serving dish and garnish with chives. 9. Remove the fritters from the heat and transfer to a serving plate. Serve the yoghurt dip alongside.

For the fritters55g/2oz self-raising flour1 egg½ bird' s eye chilli, chopped3 tbsp milk¼ corn on the cob, kernels removeddrizzle of olive oilFor the dressing1 garlic clove, peeled and crushed1 spring onion, finely chopped2 tsp honey2 tsp sesame oil2 tsp soy sauce2 tsp olive oil



Method



1. Whisk the flour, egg, chilli and milk in a bowl to form a batter, adding extra milk or flour if necessary to make a thick batter.2. Stir in the sweetcorn kernels.3. Heat a non-stick frying pan brushed with oil. Use a spoon to drop the mixture into the hot oil and cook the fritters for 2-3 minutes on each side.4. To make the dressing, whisk the garlic, spring onion, honey, sesame oil, soy sauce and olive oil in a bowl until combined.5. Transfer the sweetcorn fritters to a plate and drizzle the dressing over to serve.
