Thai Beef Salad with Cucumber Dressing (recipes)


Thai Beef Salad with Cucumber Dressing

Yield: Makes 4 servings



Ingredients:



Cucumber Dressing (recipe follows)

1pound extra-lean (90% lean) ground beef

1/2red bell pepper, cut into thin strips

6mushrooms, quartered

2green onions, diagonally cut into 1-inch pieces

1clove garlic, minced

1tablespoon seasoned rice vinegar

1teaspoon soy sauce

Salt and black pepper

Lettuce leaves

3ounces ramen noodles, cooked*

12cherry tomatoes, halved (optional)

Mint sprigs (optional)









Preparation:





1.Prepare Cucumber Dressing; set aside. Brown beef in medium skillet. Drain. Add red bell pepper, mushrooms, green onions and garlic; cook until tender. Stir in vinegar and soy sauce; season with salt and black pepper to taste.2.Arrange lettuce on four plates. Top with noodles and beef mixture. Garnish with tomatoes and mint. Serve with dressing.

Cucumber Dressing



Ingredients:



1medium cucumber, coarsely chopped

1/2cup coarsely chopped onion

1/2cup loosely packed cilantro leaves

1clove garlic, minced

1tablespoon diced jalapeño or green chili pepper*

1/2cup seasoned rice vinegar









Preparation:





1.Place cucumber, onion, cilantro, garlic and jalapeño pepper in food processor container; process 1 minute. Spoon mixture into small bowl; stir in vinegar.
