Tortilla Soup (recipes)

Yield: Makes 6 servings



Ingredients:



2cans (about 14 ounces each) chicken broth

1can (about 14 ounces) diced tomatoes with jalapeño peppers

2cups chopped carrots

2cups frozen corn, thawed

1-1/2cups chopped onions

1can (8 ounces) tomato sauce

1tablespoon chili powder

1teaspoon ground cumin

1/4teaspoon garlic powder

2cups chopped cooked chicken (optional)

Shredded Monterey Jack cheese

Tortilla chips, broken









Preparation:





1.Combine broth, tomatoes, carrots, corn, onions, tomato sauce, chili powder, cumin and garlic powder in 4-quart slow cooker. Cover; cook on LOW 6 to 8 hours.2.Stir in chicken, if desired. Ladle into bowls. Top each serving with cheese and tortilla chips.
