Tropical Turkey Salad

Yield: Makes 6 servings



Ingredients:



4cups cubed cooked turkey

2cups diced ripe mango (2 medium mangos)

1cup pecan pieces, toasted

3/4cup reduced-fat mayonnaise

1tablespoon lime juice

1teaspoon poppy seeds

1/2teaspoon salt

1/4teaspoon black pepper

6cups greens, such as Bibb lettuce or spinach leaves









Preparation:





1.Combine turkey, mangos and pecans in large bowl. Combine remaining ingredients except greens in small bowl. Blend well and pour over turkey mixture; toss. 2.Arrange greens on plates. Spoon turkey salad over greens. Serve immediately or cover and refrigerate up to 4 hours.
