Ingredients



85g/3oz caster sugar570ml/1pint milk1 vanilla pod, seeds only 200g/7oz basmati rice110ml/4fl oz double cream4 tbsp soft brown sugar



Method



1. Place the sugar, milk and vanilla seeds into a pan and bring to the boil.2. Add the rice, reduce the heat and gently simmer for 8-10 minutes.3. Add the cream and simmer for a further 4-5 minutes.4. Transfer the rice pudding to serving bowls and sprinkle the brown sugar over.5. Using a blow-torch, carefully glaze the rice pudding to golden.6. Serve immediately.
