Waldorf Salad (recipes)




Yield: Makes 2 servings



Ingredients:



1unpeeled tart red apple, such as McIntosh, coarsely chopped

1teaspoon fresh lemon juice

4teaspoons frozen apple juice concentrate, thawed

1tablespoon fat-free mayonnaise

1tablespoon fat-free sour cream

1/8teaspoon paprika

1/2cup finely chopped celery

6large lettuce leaves, washed

5teaspoons coarsely chopped walnuts









Preparation:





1.Combine apple and lemon juice in resealable food storage bag. Seal bag; toss to coat.2.Combine apple juice concentrate, mayonnaise, sour cream and paprika in medium bowl until well blended. Add apple mixture and celery; toss to coat. Cover; refrigerate 2 hours before serving.3.Serve each salad over lettuce leaves. Top each serving evenly with walnuts.

50g/2oz walnuts, chopped1 tsp wholegrain mustard1 pear, choppedhandful mixed salad leaves 55g/2oz goats' cheese, sliced 1 tbsp olive oil1 tsp white wine vinegar



Method



1. Place the walnuts and mustard into a bowl and mix to coat.2. Place the goats' cheese into a frying pan over a high heat and cook for one minute on each side. Remove from the pan and set aside.3. Place the olive oil and vinegar in a bowl and mix well. Add the salad leaves and walnuts and toss well to coat.4. To serve, transfer the salad to a bowl and top with the pan-fried goats' cheese.
