Bessemer, Sir Henry (sh)

died March 15, 1898, London

British inventor and engineer.

Son of a metallurgist, he set up his own casting business at 17. At that time the only iron-based construction materials were cast iron and wrought iron. So-called steel was made by adding carbon to pure forms of wrought iron (see wootz); the resulting material was used almost entirely for cutting tools. During the Crimean War Bessemer worked to devise a stronger cast iron for cannon. The result was a process for the inexpensive production of large, slag-free ingots of steel as workable as any wrought iron. He eventually also discovered how to remove excess oxygen from the iron. Rich Chocolate Pudding (recipes)


Rich Chocolate Pudding

Yield: Makes 4 servings



Ingredients:



2/3cup sugar

1/4cup unsweetened cocoa powder

3tablespoons cornstarch

2cups reduced-fat (2%) milk

1egg

1/2teaspoon vanilla

1tablespoon butter









Preparation:





1.Combine sugar, cocoa and cornstarch in medium saucepan; whisk in milk. Cook over medium-high heat, stirring frequently, until mixture boils; boil 1 minute, stirring constantly.2.Beat egg in small bowl. Whisk about 1/2 cup hot milk mixture into egg; whisk egg mixture back into saucepan. Cook over medium heat 2 minutes, stirring constantly.3.Remove pudding from heat; stir in vanilla and butter. Pour into 4 individual serving dishes. Serve warm or cover and refrigerate until ready to serve.







Serving Suggestion:

Serve pudding with banana slices, mandarin orange segments and cookies. Or top with scoops of ice cream or frozen yogurt and a sprinkle of grated chocolate.Rich Mocha Pudding:

Add 1 to 1-1/2 teaspoons instant coffee crystals to sugar mixture in step 1.
