Saucy Tropical Turkey (recipes)


Saucy Tropical Turkey

Cook Time: 6-1/2 to 7-1/2 hours

Prep Time: 15 minutes

Yield: Makes 6 servings



Ingredients:



3to 4 turkey thighs, skin removed (about 2-1/2 pounds)

2tablespoons vegetable oil

1small onion, halved and sliced

1can (20 ounces) pineapple chunks, drained

1red bell pepper, cubed

2/3cup apricot preserves

3tablespoons soy sauce

1teaspoon grated lemon peel

1teaspoon ground ginger

1/4cup cold water

2tablespoons cornstarch

Hot cooked rice









Preparation:





1.Rinse turkey and pat dry. Heat oil in large skillet; brown turkey on all sides. Place turkey, onion, pineapple and bell pepper in slow cooker.2.Combine preserves, soy sauce, lemon peel and ginger in small bowl; mix well. Spoon over turkey. Cover; cook on LOW 6 to 7 hours.3.Remove turkey from slow cooker; keep warm. Blend water and cornstarch until smooth; stir into slow cooker. Cook, uncovered, on HIGH 15 minutes or until sauce is slightly thickened. Adjust seasonings. Return turkey to slow cooker; cook until hot. Serve with rice.
